The editor covers that exact spot and drops in an editable copy at a matching size so you can retype it, the same technique most online PDF editors use since PDFs don't store text as an editable paragraph. For anything you don't want visible at all, use Whiteout/Redact instead.
Yes. Drag thumbnails in the left Pages panel to reorder them, and use the toolbar to duplicate the current page, insert a blank page, crop, rotate or delete pages.
Whiteout places a visual cover over content. For sensitive information, enable Secure Redaction; affected original pages are flattened before export so the underlying selectable content is not retained on those pages.
